Athena shared her favorite matcha cookie recipe with us! She’s a true matcha lover and a big fan of Yoisho matcha. She made these cookies, and let us tell you—they are not only to die for, but also absolutely gorgeous! The vibrant green color makes them just as pretty as they are delicious.
Want to make them yourself? Here’s how:
* 200g flour
* 130g butter
* 70g brown sugar
* 30g white sugar
* 12g Yoisho matcha
* 4g baking powder
* 1 egg
filling:
* 45g white chocolate
* 30g heavy cream
* 4g Yoisho matcha
* 3g butter
• extra matcha and sea salt flakes for topping
step 1:
1. melt butter, mix together with sugars, and egg
2. sift in flour, matcha, and baking powder into the butter mixture & combine with a whisk
3. wrap in cling film and refrigerate for 2 hours
4. roll out dough evenly (1cm thickness) then use a cookie cutter to cut out 6 to 8 cookies
5. bake in a preheated oven for 11-13 minutes at 180 degrees celsius
step 2:
1. melt white chocolate, cream, matcha (sifted), and butter in the microwave in 10 sec increments and stir until combined
2. take the cookies out of the oven & press in the middle using a back of a small spoon
3. allow cookies to cool
4. fill with the ganache filling & refrigerate for 2 hours
5. sprinkle with sea salt and a dusting of matcha and enjoy!
